Chicken, curry cut (bone in chicken, small pieces)750 g country chicken
Onion1 large
Tomato1 medium
Ginger garlic paste2 tbsp
Fresh grated coconut½ cup
Poppy seeds (white poppy seeds)1 tsp
Coriander seeds1 tbsp
Cumin seeds1 tsp
Black pepper1½ tsp
Whole spicescloves, cinnamon
Dried red chilli6
Mint leavesa handful
Coriander leaves (cilantro)a handful
Turmeric (ground turmeric)½ tsp
Cooking oil (vegetable oil)3 tbsp
Water3 cups

Method

4 steps
  1. 1Roast coriander seeds, cumin, pepper, whole spices, red chillies and poppy seeds. Grind with coconut, mint and coriander leaves.
  2. 2Heat oil, fry onion golden. Add ginger garlic paste and tomato, cook down.
  3. 3Add chicken, turmeric and salt and sear. Add the paste and water and pressure cook 4 whistles.
  4. 4Simmer uncovered 5 minutes; keep the saaru thin.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
