Ingredients

Beef800 g (horse is traditional)
Water2.5 litres
Maida (all-purpose flour, plain flour)2½ cups
Egg1
Onion1 large, thinly sliced
Black pepper1 tsp
Saltto taste

Method

4 steps
  1. 1Simmer the beef in salted water, skimming, until very tender.
  2. 2Make a stiff dough with flour, egg, a pinch of salt and water; rest, roll very thin into sheets and boil in some of the broth.
  3. 3Cool slightly, then cut both meat and noodle sheets into very fine strips.
  4. 4Toss with the raw onion, black pepper and a ladle of broth. Serve with cups of hot broth.
Serve it like this
