Ingredients

4 servings
Mutton (goat meat)400 g bones with some meat
Shallots8, crushed
Tomato1, chopped
Ginger2.5 cm, crushed
Garlic4 cloves, crushed
Black pepper1½ tsp, crushed
Cumin seeds1 tsp
Fennel seeds½ tsp
Coriander seeds1 tsp
Turmeric (ground turmeric)¼ tsp
Curry leaves1 sprig
Cooking oil (vegetable oil)2 tsp
Salt1 tsp
Water6 cups
Coriander leaves (cilantro)1 tbsp

Method

4 steps
  1. 1Crush pepper, cumin, fennel and coriander seeds coarsely.
  2. 2Heat oil in the cooker, fry shallots, ginger, garlic and curry leaves. Add tomato and the spices.
  3. 3Add mutton, turmeric, salt and water. Pressure cook for 6 whistles, then 10 minutes on low. Let the pressure release naturally.
  4. 4Strain or serve as is, with coriander.
Serve it like this

Ladle into warm bowls and serve hot, with a few coriander leaves on top.
