Ingredients

Mussels1.5 kg green lipped mussels in shell, steamed, meat chopped
Egg2
Maida (all-purpose flour, plain flour)¾ cup
Baking powder1 tsp
Milk⅓ cup
Onion1 small, finely chopped
Spring onion (green onion, scallion)2, sliced
Flat leaf parsleya handful
Lemon juice2 tsp, plus wedges
Salt½ tsp
Black peppera pinch
Cooking oil (vegetable oil)for frying

Method

4 steps
  1. 1Steam the mussels in a covered pan with a splash of water until open, 4 to 5 minutes. Discard any closed ones, remove meat and chop.
  2. 2Whisk eggs, milk, flour and baking powder into a thick batter. Fold in mussels, onion, spring onion, parsley, lemon and seasoning.
  3. 3Fry spoonfuls in hot oil 2 to 3 minutes a side until golden and puffed.
  4. 4Drain and serve with lemon wedges.
Serve it like this

Stack on a plate with lemon wedges and tartare sauce or aioli on the side. Serve warm.
