Ingredients

4 servings
Besan (chickpea flour, gram flour)1¼ cups
Whole wheat flour (wholemeal atta flour, chapati flour)1¼ cups atta
Onion1 small, finely chopped
Green chilli2, chopped
Ginger1.5 cm, grated
Coriander leaves (cilantro)a handful
Kasuri methi (dried fenugreek leaves)1 tbsp, crushed
Ajwain (carom seeds)½ tsp
Red chilli powder (indian red chili powder)1 tsp
Turmeric (ground turmeric)¼ tsp
Wateras needed
Ghee2 tbsp
Butterto serve
Saltto taste

Method

4 steps
  1. 1Mix besan, atta, onion, chilli, ginger, coriander, kasuri methi, ajwain, chilli powder, turmeric, salt and a spoon of ghee. Knead with water into a soft dough. Rest.
  2. 2Roll each ball thick between two sheets or with plenty of dry flour.
  3. 3Cook on a hot tawa, then roast directly on the flame or press on the tawa till spotted.
  4. 4Brush with ghee and top with butter. Serve with curd, onion and pickle.
Serve it like this

Stack them in a cloth lined basket so they stay soft and warm, with a little ghee on top if you like.
