Jalapeño12 large jalapeños or bhavnagri chillies

Potato1 medium, boiled and mashed

Cream cheese½ cup

Cheddar cheese½ cup, grated

Fennel seeds½ tsp, crushed

Dry mango powder½ tsp

Coriander leaves (cilantro)a handful, chopped

Salt1 tsp, divided

Besan (chickpea flour, gram flour)¾ cup

Rice flour2 tbsp

Ajwain (carom seeds)¼ tsp

Kashmiri chilli powder½ tsp

Turmeric (ground turmeric)a pinch

Water½ cup, cold

Cooking oil (vegetable oil)1 litre for deep frying (about 4 tbsp absorbed)

Chaat masala1 tsp

Method

5 steps

1Slit each chilli lengthways on one side and scrape out the seeds and pith.
2Mix the potato, cream cheese, cheddar, fennel, amchur, coriander and 1/2 tsp salt. Stuff into the chillies and press closed.
3Whisk the besan, rice flour, ajwain, chilli, turmeric and remaining salt with the cold water.
4Heat the oil to 175°C on medium heat. Dip the chillies in batter and fry 3 at a time for 3 to 4 minutes, turning.
5Drain on a rack and dust with chaat masala. Rest 2 minutes before eating.

Serve it like this

Stand the poppers upright in a tall cup or lay them in a fan on a board, one split open to show the molten centre, with mint chutney and ketchup dips.
