Ingredients

4 servings
Minced beef (beef mince, beef or buff keema)200 g
Minced pork (pork mince, ground pork)200 g
Onion1, finely chopped
Cabbage100 g finely chopped for the mix, 200 g shredded to serve
Breadcrumbs1½ cups panko, a little for the mix
Milk2 tbsp
Egg2
Nutmega pinch
Salt¾ tsp
Black pepper¼ tsp
Maida (all-purpose flour, plain flour)¼ cup
Cooking oil (vegetable oil)absorbed from frying
Tonkatsu sauceto serve

Method

5 steps
  1. 1Knead the meats with salt until sticky, then mix in onion, chopped cabbage, a handful of panko soaked in milk, 1 egg, nutmeg and pepper.
  2. 2Shape 4 thick patties and chill 15 minutes.
  3. 3Coat in flour, beaten egg and panko.
  4. 4Fry at 170 C for 5 to 6 minutes, turning, until deep golden and cooked through with no pink.
  5. 5Rest 2 minutes and serve with shredded cabbage and sauce.
Serve it like this

Cut one cutlet in half to show the juicy inside, lean it against a tall pile of cabbage, drizzle with sauce and add rice and miso soup.
