Classic mawa bati.

Ingredients

8 servings
Khoa1 cup
Chhena¼ cup
Maida (all-purpose flour, plain flour)¼ cup
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Almonds1½ tbsp, chopped
Pistachios1 tbsp, chopped
Raisins1 tbsp
Sugar10 g for the filling, 300 g for syrup
Water1½ cups
Gheefor frying, about this much is absorbed
Cardamom½ tsp

Method

4 steps
  1. 1Knead khoa, chhena, maida and soda into a smooth dough.
  2. 2Mix nuts, raisins, 10 g sugar and cardamom. Wrap a spoonful in each portion of dough and roll 8 large balls.
  3. 3Fry on low heat for 15 minutes until dark brown.
  4. 4Soak in warm syrup for 2 hours.
Serve it like this

Serve one bati cut in half in a small bowl to show the nutty centre, with a little syrup.
