White bread4 thick slices, a day old
Egg3
Milk⅓ cup
Onion1 small, finely chopped
Green chilli2, finely chopped
Coriander leaves (cilantro)a big handful
Turmeric (ground turmeric)a pinch
Kashmiri chilli powder¼ tsp
Cumin powder (ground cumin)¼ tsp
Butter4 tsp
Mint leavesa handful
Lemon juice2 tsp
Hung curd (greek yogurt)⅓ cup
Saltto taste

Method

5 steps
  1. 1Blend the mint, half the coriander, 1 green chilli, the lemon juice, a pinch of salt and 2 tbsp water. Swirl half into the hung curd.
  2. 2Whisk the eggs, milk, onion, remaining chilli and coriander, turmeric, kashmiri chilli, cumin and salt in a wide dish.
  3. 3Soak each slice for 20 seconds a side.
  4. 4Melt half the butter in a pan on medium heat. Fry two slices for 3 minutes a side, pressing the onion bits into the surface. Repeat with the rest.
  5. 5Cut on the diagonal and serve with the chutney curd and the rest of the chutney.
Serve it like this

Overlap two diagonal halves on a plate, spoon a swoosh of chutney curd beside them and dot pure mint chutney along the curve. Finish with coriander leaves.
