Ingredients

4 servings
Makhana (fox nuts)4 cups
Tomato3 medium, pureed
Cashews18, soaked
Ghee2 tbsp
Cumin seeds1 tsp
Ginger1.5 cm, grated
Green chilli2, slit
Red chilli powder (indian red chili powder)½ tsp, if your fast allows
Sugara pinch
Water1 cup
Coriander leaves (cilantro)a handful
Rock salt (sendha namak)to taste

Method

5 steps
  1. 1Roast makhana in 1 tsp ghee till crisp. Set aside.
  2. 2Grind cashews with a little water to a smooth paste.
  3. 3Heat ghee, add cumin, ginger, chilli, then tomato puree. Cook till ghee separates.
  4. 4Add cashew paste, chilli powder, sugar, rock salt and water. Simmer.
  5. 5Add makhana just before serving, simmer one minute, finish with coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
