Ingredients

4 servings
Butter1½ tbsp
Leek1, sliced
Potato4 medium, cubed
Carrot1, sliced
Water3⅓ cups fish stock
Allspice5 berries
Bay leaf (indian bay leaf)1
Salmon500 g, skinned and cubed
Fresh cream (thickened cream, heavy cream)¾ cup + 2 tbsp
Dill leavesa big handful, chopped
Saltto taste
White peppera pinch

Method

5 steps
  1. 1Soften the leek in butter without colouring.
  2. 2Add potatoes, carrot, stock, allspice and bay. Simmer until the potatoes are just tender.
  3. 3Pour in the cream and bring back to a gentle simmer.
  4. 4Add the salmon, cover and turn off the heat. Leave 5 minutes.
  5. 5Stir in plenty of dill, season and serve.
Serve it like this

Ladle into deep bowls so the salmon chunks show, add extra dill and serve with dark rye bread and butter.
