Ingredients

Bacon (streaky rashers, streaky bacon)3 rashers, diced
Onion1, chopped
Carrot1, diced
Celery2 sticks or a little celeriac, diced
Whole masoor (brown lentils)1¼ cups brown lentils (sabut masoor)
Potato2, diced
Vegetable stock (vegetable broth)6 cups
Bay leaf (indian bay leaf)1
Dried thyme½ tsp
Smoked sausagesmoked sausages, sliced
Vinegar1½ tbsp
Sugara pinch
Salt1 tsp
Black pepper½ tsp
Flat leaf parsleychopped

Method

4 steps
  1. 1Cook bacon in a pot until the fat runs, add onion, carrot and celery and cook 6 minutes.
  2. 2Add lentils, potato, stock, bay and thyme. Simmer 35 minutes.
  3. 3Add the sausage slices and simmer 10 minutes.
  4. 4Season with vinegar, a pinch of sugar, salt and pepper. Scatter parsley.
Serve it like this

Serve in deep bowls with sausage slices on top, parsley and a vinegar bottle on the table. Hot, with rye bread or a pretzel.
