Linguine al granchio.

Ingredients

4 servings
Pasta320 g linguine
Crab250 g white crab meat
Olive oil3 tbsp, plus extra to finish
Garlic3 cloves, thinly sliced
Dried red chilli½ tsp flakes
Tomato200 g cherry tomatoes, halved
Lemon juice1 lemon, zest and juice
Flat leaf parsleya handful, chopped
Saltto taste

Method

5 steps
  1. 1Boil the linguine in salted water until 1 minute short of al dente; save some pasta water.
  2. 2Warm oil with garlic and chilli over low heat.
  3. 3Add tomatoes and cook until just collapsing.
  4. 4Toss in the pasta, a splash of water and the crab. Toss over low heat just to warm through.
  5. 5Finish with lemon zest, juice, parsley and a drizzle of oil.
Serve it like this

Twirl into warm bowls, spoon over any crab left in the pan, add parsley, lemon zest and a final thread of olive oil.
