Ingredients

Sweet potato glass noodles (glass noodles, cellophane noodles)150 g mung bean glass noodles
Cucumber1, in matchsticks
Carrot1, in matchsticks
Chinkiang black vinegar2 tbsp
Soy sauce2 tbsp
Sugar2 tsp
Garlic3 cloves, minced
Chinese chilli oil1 tbsp
Sesame oil2 tsp
Coriander leaves (cilantro)chopped
Sesame seeds1 tsp

Method

4 steps
  1. 1Soak and briefly boil the glass noodles, then rinse in cold water and drain.
  2. 2Whisk vinegar, soy, sugar, garlic, chilli oil and sesame oil.
  3. 3Toss noodles with cucumber, carrot and dressing.
  4. 4Top with coriander and sesame seeds.
Serve it like this

Pile into a bowl in a loose nest, dressing pooled at the bottom, coriander on top. Serve cold.
