Ingredients

Pumpkin3 cups, cubed, skin on
Cooking oil (vegetable oil)1 tbsp
Mustard seeds½ tsp
Cumin seeds½ tsp
Fenugreek seeds¼ tsp
Asafoetidaa pinch
Green chilli2, chopped
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)½ tsp
Jaggery1 tbsp
Peanuts2 tbsp, roasted and crushed
Coriander leaves (cilantro)a handful
Saltto taste

Method

3 steps
  1. 1Heat oil, crackle mustard, cumin and fenugreek, add asafoetida and chilli.
  2. 2Add pumpkin, turmeric and salt. Cover and cook on low 10 to 12 minutes until soft.
  3. 3Add jaggery, chilli powder and peanuts. Stir, mashing a few pieces, and cook 2 minutes. Finish with coriander.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
