Ingredients

3 servings
Chicken, boneless500 g boneless thigh, 2 cm pieces
Soy sauce1 tbsp
Ginger1 tbsp, minced
Garlic3 cloves, sliced
Salt½ tsp
Cornflour (cornstarch)2 tbsp
Cooking oil (vegetable oil)for frying (about 4 tbsp absorbed)
Dried red chilli2 cups, snipped in halves
Sichuan peppercorn1 tbsp
Sugar½ tsp
Sesame seeds2 tsp, toasted
Spring onion (green onion, scallion)2 stalks, sliced

Method

4 steps
  1. 1Toss chicken with soy, ginger, salt and cornflour. Rest 15 minutes.
  2. 2Deep or shallow fry the chicken in batches until golden. Rest, then fry again until deep brown and crisp. Cook until no pink remains.
  3. 3Pour off all but 3 tbsp oil. On low heat, fry the garlic, chillies and Sichuan pepper.
  4. 4Return the chicken, add sugar, toss on high heat. Finish with sesame and spring onion.
Serve it like this

Serve in a wide bowl as a heap of chillies with chicken hiding inside, chopsticks ready. Keep a bowl for the chillies you fish out.
