Ingredients

4 servings
Idli dosa batter3 cups
Onion1 small, finely chopped
Green chilli2, finely chopped
Ginger1.5 cm, grated
Curry leaves1 sprig, chopped
Mustard seeds1 tsp
Urad dal (split black gram)1 tsp
Chana dal (split chickpeas)2 tsp
Fresh grated coconut2 tbsp
Coriander leaves (cilantro)a handful
Cooking oil (vegetable oil)3 tbsp
Salta pinch

Method

5 steps
  1. 1Temper mustard, urad dal and chana dal in 1 tbsp oil. Add curry leaves, chilli, ginger and onion and cook briefly.
  2. 2Stir this into the batter with coconut and coriander. Keep the batter thick.
  3. 3Heat the paniyaram pan, add a few drops of oil in each pit and fill each three quarters full.
  4. 4Cover and cook on medium low till the bottom is golden. Flip each with a skewer and cook the other side.
  5. 5Serve hot with coconut or tomato chutney.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
