Ingredients

6 servings
Rice1 cup
Whole masoor (brown lentils)¾ cup brown lentils
Macaroni1½ cups
Vermicelli¼ cup
Chickpeas, boiled1¼ cups cooked
Onion3 large, sliced
Cooking oil (vegetable oil)for frying onions (about 1/3 cup absorbed)
Tomato puree1 cup
Garlic6 cloves
Vinegar2 tbsp
Cumin powder (ground cumin)1½ tsp
Kashmiri chilli powder1½ tsp
Green chilli1
Saltto taste
Water5 cups

Method

5 steps
  1. 1Fry the onions slowly in the oil until crisp and dark brown. Drain on paper and keep the oil.
  2. 2Boil the lentils until just tender. Fry the vermicelli and rice in a little onion oil, add the lentils and water, and cook covered until tender.
  3. 3Boil the macaroni in salted water until just done.
  4. 4For the sauce, fry the garlic, then add tomato puree, cumin, chilli, vinegar and salt and simmer until thick.
  5. 5Layer rice and lentils, macaroni and chickpeas in bowls. Ladle over sauce and top with crispy onions.
Serve it like this

Layer in a deep bowl, ladle over tomato sauce and pile crispy onions on top. Serve with extra garlic vinegar and chilli sauce.
