Ingredients

6 servings
Colocasia (taro root, eddoes)1 kg large colocasia (arbi), peeled
Pork600 g pork shoulder, cubed, or chicken
Celery2 sticks, chopped
Onion1, chopped
Tomato puree⅔ cup
Tomato2, grated
Olive oil4 tbsp
Lemon juice2 tbsp
Cinnamon1 small stick
Bay leaf (indian bay leaf)1
Water2½ cups
Saltto taste

Method

4 steps
  1. 1Peel the colocasia and dry it well. Cut into chunks by cutting partway and snapping the pieces off.
  2. 2Brown the pork in olive oil, then the colocasia, and set aside.
  3. 3Soften onion and celery, add tomato puree, grated tomato, cinnamon and bay.
  4. 4Return pork and colocasia with water and salt. Simmer covered until tender, then add lemon juice.
Serve it like this

Serve in deep plates with plenty of sauce, a lemon wedge and crusty bread or pita alongside.
