Buckwheat flour1⅔ cups
Waterabout 1 1/4 cups
Salta pinch
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Cooking oil (vegetable oil)for the pan

Method

4 steps
  1. 1Whisk buckwheat flour, salt, soda and water into a thick, pourable batter. Rest 10 minutes.
  2. 2Heat a lightly oiled pan and pour a ladle of batter, spreading into a thick round.
  3. 3Flip and cook the other side until set.
  4. 4Serve warm with chilli paste or chura sabzi.
