Ingredients

5 servings
Maida (all-purpose flour, plain flour)3¼ cups
Water¾ cup + 1 tbsp
Salt2 tsp, divided
Minced mutton (goat mince, ground goat)300 g lamb mince
Potato4, finely diced
Onion2, finely chopped
Cooking oil (vegetable oil)1½ tbsp
Cumin seeds½ tsp
Black pepper½ tsp
Curd (plain yogurt, natural yoghurt)to serve

Method

5 steps
  1. 1Make a firm dough with flour, water and 1 tsp salt; cover and rest 30 minutes.
  2. 2Mix mince, potato, onion, cumin, pepper and the rest of the salt.
  3. 3Roll the dough into a thin rectangle, brush with oil, spread the filling leaving a border and roll up tightly. Pinch the ends.
  4. 4Steam the log, coiled into a spiral, on an oiled steamer tray until the dough is cooked.
  5. 5Rest 5 minutes, slice into thick spirals and serve with yoghurt and chilli sauce.
