Kerala mutton curry.

Ingredients

Mutton (goat meat)600 g, curry cut
Potato1 large, cubed
Onion2 medium, sliced
Tomato1 medium
Ginger garlic paste2 tbsp
Green chilli3
Coriander powder (ground coriander)1½ tbsp
Kashmiri chilli powder1 tbsp
Turmeric (ground turmeric)½ tsp
Black pepper1½ tsp
Garam masala1½ tsp
Thick coconut milk⅔ cup
Coconut oil3 tbsp
Curry leaves3 sprigs
Water1⅔ cups
Saltto taste

Method

4 steps
  1. 1Heat coconut oil, fry onions until golden. Add ginger garlic paste, green chillies, then powders and tomato. Cook until oil separates.
  2. 2Add mutton and sear 5 minutes. Add water and salt and pressure cook 6 whistles; let the pressure release naturally.
  3. 3Add potatoes and simmer until soft.
  4. 4Stir in thick coconut milk, pepper and curry leaves; warm through.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
