Ingredients

4 servings
Brinjal (eggplant, aubergine)1 large or 4 small
Shallots8, chopped
Tomato1 medium
Tamarinda small lemon sized ball
Water1¼ cups
Sambar powder2 tsp
Green chilli2, slit
Turmeric (ground turmeric)¼ tsp
Sesame oil1½ tbsp
Mustard seeds½ tsp
Chana dal (split chickpeas)1 tsp
Curry leaves2 sprigs
Asafoetidaa pinch
Jaggery1 tsp
Saltto taste

Method

3 steps
  1. 1Roast the brinjal over an open flame until charred and soft. Peel and mash.
  2. 2Heat sesame oil, temper mustard, chana dal, curry leaves and asafoetida. Add shallots, green chillies and tomato and cook soft.
  3. 3Add tamarind extract, sambar powder, turmeric and salt and boil 5 minutes. Add mashed brinjal and jaggery and simmer to a thick, pourable gravy.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
