Ingredients

6 servings
Ash gourd (winter melon)1 small piece, peeled, seeded and grated
Sugar1 cup
Ghee¼ cup
Saffrona big pinch
Cardamom½ tsp
Cashews2 tbsp

Method

4 steps
  1. 1Squeeze the grated ash gourd lightly and keep the juice.
  2. 2Cook the ash gourd in 1 tbsp ghee with a little of its juice until soft and transparent.
  3. 3Add sugar and saffron and cook until thick, adding the remaining ghee bit by bit.
  4. 4Finish with cardamom and fried cashews.
Serve it like this

Serve a spoonful on a banana leaf as part of a festive meal, or in a small bowl with cashews.
