Ingredients

4 servings
Dried salted fish100 g, soaked and cleaned
Brinjal (eggplant, aubergine)3 small, quartered
Drumstick (moringa pods)1, in pieces
Shallots12, peeled
Garlic10 cloves
Tomato1 medium
Tamarinda lemon sized ball
Water2 cups
Sambar powder1½ tbsp
Turmeric (ground turmeric)¼ tsp
Sesame oil3 tbsp
Mustard seeds½ tsp
Fenugreek seeds½ tsp
Curry leaves2 sprigs
Saltonly a pinch

Method

5 steps
  1. 1Soak dried fish in hot water 15 minutes, scrub, change the water twice and cut into pieces.
  2. 2Heat sesame oil, splutter mustard and fenugreek, add curry leaves, shallots and garlic and fry golden.
  3. 3Add tomato, brinjal and drumstick; saute 3 minutes. Add sambar powder and turmeric.
  4. 4Pour in tamarind extract and water and simmer until vegetables are almost cooked. Taste before adding salt.
  5. 5Add the dried fish and simmer 10 minutes until oil floats.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
