Ingredients

4 servings
Rice1 cup, half raw and half parboiled
Urad dal (split black gram)½ cup
Black pepper1½ tsp, coarsely crushed
Cumin seeds1½ tsp
Dry ginger powder (ground ginger)1 tsp
Ginger2.5 cm, finely chopped
Curry leaves1 sprig
Asafoetidaa pinch
Cashews15, broken
Ghee3 tbsp
Sesame oil1 tbsp
Waterfor grinding
Saltto taste

Method

5 steps
  1. 1Soak rice and urad dal separately for 5 hours. Grind to a slightly coarse batter, like rava, add salt and ferment overnight.
  2. 2Heat ghee and gingelly oil. Fry cashews, then add pepper, cumin, ginger, curry leaves and asafoetida.
  3. 3Pour this tempering into the batter with the dry ginger and mix well.
  4. 4Grease small steel tumblers or bowls, fill them two thirds and steam.
  5. 5Rest, unmould, slice and serve with coconut chutney and sambar.
Serve it like this

Serve hot from the steamer with chutney and sambar in small bowls on the side.
