Ingredients

4 servings
Curd (plain yogurt, natural yoghurt)2 cups, slightly sour
Besan (chickpea flour, gram flour)¼ cup for kadhi, 1/2 cup for pakoras
Onion1 medium, thinly sliced
Green chilli2, chopped
Ginger2.5 cm, grated
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1 tsp
Ajwain (carom seeds)¼ tsp
Fenugreek seeds½ tsp
Cumin seeds1 tsp
Dried red chilli2
Asafoetidaa pinch
Cooking oil (vegetable oil)for frying, about 3 tbsp absorbed
Ghee1 tbsp
Coriander leaves (cilantro)to garnish
Saltto taste

Method

6 steps
  1. 1Whisk the curd with 1/4 cup besan, turmeric, half the chilli powder and 4 cups water until completely smooth.
  2. 2For the pakoras, mix the remaining besan with onion, green chilli, ginger, ajwain, a pinch of salt and a little water. Fry spoonfuls in hot oil.
  3. 3Heat a spoon of the frying oil in a deep pot, add fenugreek and cumin seeds, then the curd mixture. Bring to a boil, stirring constantly.
  4. 4Lower the heat, add salt and simmer, stirring now and then.
  5. 5Slide in the pakoras and simmer 5 minutes.
  6. 6Heat the ghee, add dried red chillies, asafoetida and the remaining chilli powder, and pour over. Garnish with coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
