Button mushroom400 g, halved
Capsicum (green capsicum, green bell pepper)1 large, in squares
Onion2 medium: 1 chopped, 1 in petals
Coriander seeds1 tbsp
Dried red chilli3
Cooking oil (vegetable oil)2 tbsp
Ginger garlic paste1 tbsp
Tomato2 medium, chopped
Turmeric (ground turmeric)¼ tsp
Garam masala½ tsp
Kasuri methi (dried fenugreek leaves)½ tsp

- 1Dry roast coriander seeds and red chillies, cool and pound coarsely.
- 2Sear the mushrooms in a dry hot kadai until their water evaporates and they brown. Set aside.
- 3Heat oil, fry the chopped onion golden, add ginger garlic paste, tomatoes, turmeric and most of the kadai masala. Cook until oil separates.
- 4Add mushrooms, capsicum, onion petals and salt. Toss on high heat for 3 minutes. Finish with the rest of the masala, garam masala and kasuri methi.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
