Cooking oil (vegetable oil)1½ tbsp
Smoked sausage250 g andouille, sliced
Chicken, boneless400 g boneless thighs, cubed
Onion1 large, diced
Capsicum (green capsicum, green bell pepper)1, diced
Celery2 sticks, diced
Garlic4 cloves
Tomato3, chopped
Rice2 cups long grain rice
Water3¾ cups stock or water
Kashmiri chilli powder2 tsp, as paprika
Red chilli powder (indian red chili powder)1 tsp, as cayenne
Dried mixed herbs (italian seasoning)1 tsp oregano and thyme
Bay leaf (indian bay leaf)2
Prawns (shrimp)250 g, peeled

Spring onion (green onion, scallion)3, slicedMethod
- 1Brown sausage in oil, then chicken, and set aside.
- 2Cook onion, capsicum and celery in the same pot 5 minutes, then garlic and spices.
- 3Add tomatoes and cook 3 minutes, then rice, stirring to coat.
- 4Add stock, bay, herbs, salt, sausage and chicken. Bring to a boil, cover and cook on low 20 minutes without stirring.
- 5Tuck prawns into the rice, cover and cook 5 to 7 minutes until pink. Rest 5 minutes, fluff and add spring onions.
Serve it like thisServe straight from the pot into wide bowls, topped with spring onion. Hot sauce and lemon wedges on the side.
