Raisins¾ cup
Prunes⅔ cup
Glace cherries (candied cherries)⅓ cup
Candied peel (tutti frutti or candied orange peel)2 tbsp
Dark rum½ cup, plus extra
Butter½ cup
Brown sugar½ cup
Egg2
Maida (all-purpose flour, plain flour)1 cup
Baking powder¾ tsp
Molasses (black treacle)2 tbsp browning
Cinnamon powder1 tsp
Nutmeg¼ tsp
Allspice¼ tsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Lemonzest of 1 lime

Method

  1. 1Blend soaked fruit with rum to a coarse paste.
  2. 2Cream butter and sugar, then beat in eggs.
  3. 3Fold in flour, spices, baking powder, browning and the fruit.
  4. 4Bake at 150°C for 1 1/2 hours.
  5. 5Brush with more rum while warm.
Serve it like this

Slice thin and serve on Christmas plates with sorrel or ginger beer.
