Ingredients

4 servings
Brinjal (eggplant, aubergine)4 medium long brinjals
Onion3, thinly sliced
Garlic6 cloves, sliced
Tomato3, chopped
Capsicum (green capsicum, green bell pepper)½, chopped
Flat leaf parsleya handful
Olive oil7 tbsp
Sugar1 tsp
Saltto taste
Water⅔ cup

Method

4 steps
  1. 1Peel the brinjals in stripes, salt and rest 20 minutes. Pat dry and fry in some of the oil until golden all over.
  2. 2Cook the onion and garlic slowly in olive oil until very soft and sweet, then add tomato, capsicum, sugar and parsley.
  3. 3Slit each brinjal lengthways and pack in the filling generously.
  4. 4Pour the water and the rest of the oil around, cover and cook on low until very soft. Cool in the pan.
Serve it like this

Serve cool or room temperature on a platter, sauce spooned over, parsley on top, with bread.
