Ingredients

4 servings
Goat trotters8 trotters, cleaned and cut
Turmeric (ground turmeric)½ tsp
Cooking oil (vegetable oil)3½ tbsp
Whole spices4 cloves, 4 cardamom, 1 inch cinnamon, 2 bay leaves
Black pepper1 tsp, whole
Onion2 medium, thinly sliced
Ginger garlic paste2½ tbsp
Red chilli powder (indian red chili powder)1 heaped tbsp
Coriander powder (ground coriander)1 heaped tbsp
Garam masala1 tsp
Saltto taste
Waterabout 7 1/2 cups
Green chilli2, slit
Mint leavesa handful
Coriander leaves (cilantro)a handful
Lemon½, cut in wedges

Method

6 steps
  1. 1Ask the butcher to singe and clean the trotters. At home, scrub them well, then boil in water with half the turmeric for 10 minutes. Drain and rinse.
  2. 2Heat oil in a large pressure cooker. Crackle the whole spices and pepper, then fry the onions until golden brown.
  3. 3Add ginger garlic paste and fry until fragrant. Add the trotters, remaining turmeric, chilli powder, coriander powder and salt, and fry for 5 minutes.
  4. 4Pour in the water. Pressure cook on high to the first whistle, then on low for about 50 minutes. Turn off and let the pressure release naturally.
  5. 5Open and simmer uncovered for 10 minutes with green chilli and garam masala, skimming some of the oil from the top if you like.
  6. 6Serve hot with mint, coriander and lemon wedges, with naan, kulcha or sheermal.
Serve it like this

Ladle into a deep bowl with plenty of broth, top with mint, coriander and a squeeze of lemon, with hot naan alongside.
