Ingredients

4 servings
Wheat noodles300 g ramen or thin wheat noodles
Egg3, for thin omelette
Cooking oil (vegetable oil)1 tsp
Cooked ham4 slices, in strips
Cucumber1, in matchsticks
Tomato1, in wedges
Soy sauce4 tbsp
Rice vinegar3½ tbsp
Sugar2 tbsp
Sesame oil1 tbsp
Water⅓ cup
Ginger1 tsp, grated
Sesame seeds1 tsp
Prepared mustarda dab of hot mustard

Method

4 steps
  1. 1Simmer soy, vinegar, sugar and water until the sugar dissolves. Add sesame oil and ginger and chill.
  2. 2Beat eggs with a pinch of salt and sugar and cook thin omelettes in a lightly oiled pan. Roll and slice into ribbons.
  3. 3Cook noodles, rinse under cold running water and chill in iced water. Drain well.
  4. 4Arrange noodles on plates with egg, ham, cucumber and tomato in rows. Pour dressing over and add sesame and mustard.
Serve it like this

Arrange noodles in a wide shallow plate with toppings in colourful rows radiating out, dressing poured over and mustard on the rim.
