Ingredients

2 servings
Maida (all-purpose flour, plain flour)6 tbsp
Water½ cup
Cabbagevery finely shredded
Moong sprouts (mung bean sprouts)1 cup bean sprouts
Pork belly6 thin slices
Wheat noodles2 portions ramen or yakisoba noodles
Egg2
Cooking oil (vegetable oil)4 tsp
Tonkatsu sauce4 tbsp okonomi or tonkatsu sauce
Mayonnaise4 tsp
Bonito flakes2 pinches
Nori sheets1 tsp crumbled
Spring onion (green onion, scallion)2 stalks, sliced
Pickled gingerred pickled ginger, to serve

Method

7 steps
  1. 1Whisk the maida and water into a smooth thin batter and rest 10 minutes. Boil the noodles 2 minutes, drain and toss with 1 tsp oil.
  2. 2Heat a tawa on medium low and brush with oil. Pour half the batter and spread it into a 20 cm thin round with the back of a ladle.
  3. 3Pile half the cabbage high on the crepe, then half the bean sprouts, a pinch of bonito and 3 pork slices on top. Drizzle 1 tbsp batter over the pork.
  4. 4Cook 4 minutes, then flip the whole stack with two wide spatulas. Cook 6 more minutes without pressing hard.
  5. 5Beside the stack, fry half the noodles with 1 tbsp sauce for 2 minutes and shape into a round. Slide the cabbage stack onto the noodles.
  6. 6Crack an egg onto the tawa, break the yolk and spread it into a round. Slide the whole stack onto the egg, cook 1 minute and flip so the egg is on top.
  7. 7Brush with sauce, zigzag the mayonnaise, scatter nori, bonito and spring onion. Repeat for the second one.
Serve it like this

Slide onto a board, cut into wedges with the spatula, and eat straight from the board. Pickled ginger on the side.
