Egg2
Milk1¼ cups
Water¼ cup
Salta pinch
Butter2 tbsp, divided
Prepared mustard1 tbsp Dijon
Cooked ham8 slices
Gruyère cheese1 cup grated, or cheddar

Method

5 steps
  1. 1Whisk the maida and salt. Whisk in the eggs, then gradually the milk and water until smooth. Stir in 1 tbsp melted butter and rest 20 minutes.
  2. 2Heat a non stick pan on medium and wipe with butter. Pour 1/4 cup batter, swirl and cook 1 minute until golden underneath, then flip.
  3. 3With the crepe still in the pan, brush a little mustard over it, scatter 2 tbsp cheese, lay a slice of ham and add a little more cheese and pepper.
  4. 4Fold the four sides in to make a square parcel and cook 1 minute more, pressing gently with the spatula.
  5. 5Slide onto a plate and keep warm while you make the rest. Serve straight away.
Serve it like this

Serve two square parcels on a plate, one cut open to show the melted cheese. A few dressed salad leaves on the side keep it bright.
