Ingredients

4 servings
Mutton (goat meat)600 g
Gongura leaves (roselle leaves)3 cups leaves
Onion2 medium
Ginger garlic paste2 tbsp
Green chilli3
Red chilli powder (indian red chili powder)1 tbsp
Coriander powder (ground coriander)1 tbsp
Turmeric (ground turmeric)½ tsp
Garam masala1½ tsp
Cooking oil (vegetable oil)3½ tbsp
Garlic4 cloves, for tempering
Dried red chilli2
Water1⅔ cups
Saltto taste

Method

4 steps
  1. 1Pressure cook mutton with half the ginger garlic paste, turmeric, salt and water for 6 whistles; let pressure release naturally.
  2. 2Saute gongura leaves in a little oil until they melt to a dark paste.
  3. 3Fry onions and green chillies golden in oil, add remaining ginger garlic paste and powders.
  4. 4Add mutton with stock and gongura and cook until thick. Temper garlic and red chillies in oil and pour over.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
