Rajma, dry (dried red kidney beans)1 cup red beans, soaked overnight
Goan sausage4 Goan chouriço sausages, casing removed
Pork250 g pork, cubed
Onion2 medium, chopped
Tomato1 medium, chopped
Garlic5 cloves, chopped
Kashmiri chilli powder1¼ tsp
Vinegar1 tbsp
Cooking oil (vegetable oil)1 tbsp

- 1Pressure cook the soaked beans with water and salt for 5 whistles.
- 2Heat oil, brown the pork, then add the sausage meat and cook until its red oil runs.
- 3Add onion, garlic, tomato and chilli powder and cook until soft.
- 4Add the beans with their liquid and vinegar. Simmer 20 to 25 minutes until thick and the pork is tender.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
