Ingredients

Chicken gizzards600 g
Ripe plantain (ripe nendran banana)3 ripe plantains, cubed
Red bell pepper (red capsicum, red pepper)1
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1 to 2
Tomato2
Onion1
Garlic3 cloves
Curry powder1 tsp
Dried thyme1 tsp
Stock cube (bouillon cube)1 cube
Cooking oil (vegetable oil)for frying, about 80 g absorbed
Saltto taste

Method

5 steps
  1. 1Boil gizzards with onion, thyme, curry and stock cube for 30 minutes. Drain.
  2. 2Fry plantain cubes until golden.
  3. 3Fry gizzards until browned.
  4. 4Blend peppers, tomato, onion and garlic; fry in oil until thick.
  5. 5Toss everything together.
Serve it like this

Pile in a bowl with toothpicks or serve with jollof rice.
