Ingredients

Potato6 medium, par boiled and coarsely grated
Sour cream1 cup
Cheddar cheese2 cups, grated
Butter60 g for sauce, 30 g for topping
Maida (all-purpose flour, plain flour)3 tbsp
Milk1 cup
Vegetable stock (vegetable broth)1 cup
Onion1 small, finely chopped
Cornflakes2 cups, lightly crushed
Saltto taste
Black pepper½ tsp

Method

  1. 1Par boil the potatoes whole for 12 minutes, cool, then grate coarsely.
  2. 2Melt 60 g butter, cook the onion, stir in flour, then whisk in milk and stock and simmer until thick.
  3. 3Off the heat stir in sour cream, most of the cheese, salt and pepper, then fold in potatoes. Spread in a baking dish.
  4. 4Toss cornflakes with the remaining melted butter and scatter over with the last of the cheese.
  5. 5Bake at 180°C for 35 to 40 minutes until bubbling and golden.
Serve it like this

Serve straight from the dish with a big spoon, crunchy top on every portion. Pairs with roast ham, turkey or chicken.
