Foxtail millet¾ cup, rinsed and soaked 20 minutes
Cooking oil (vegetable oil)1 tbsp
Mustard seeds½ tsp
Urad dal (split black gram)1 tsp
Chana dal (split chickpeas)1 tsp
Curry leavesa sprig
Ginger1.5 cm, chopped
Green chilli1 to 2, chopped
Onion1, chopped
Carrot1 small, diced
Green beans6, chopped
Green peas¼ cup
Peanuts1 tbsp
Waterabout 2 cups

Lemon juice2 tsp
Coriander leaves (cilantro)2 tbspMethod
- 1Heat oil, crackle mustard, then urad dal, chana dal, peanuts and curry leaves until golden.
- 2Add ginger, chilli and onion and cook until soft, then the vegetables for 3 minutes.
- 3Add water and salt, bring to a boil, then add drained millet.
- 4Cover and cook on low for 12 to 15 minutes until the water is absorbed. Rest 5 minutes.
- 5Fluff with lemon and coriander.
Serve it like thisFluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
