Ingredients

4 servings
Fish600 g fresh tuna or firm fish
Tapioca500 g cassava (yuca), in chunks
Tomato2, chopped
Onion2 red onions, 1 for broth, 1 thinly sliced
Lemon2 limes
Cumin powder (ground cumin)1 tsp
Coriander leaves (cilantro)a handful
Green chilli1
Cooking oil (vegetable oil)1 tbsp
Water1.5 litres
Popcorn kernels2 tbsp, popped, to serve
Saltto taste

Method

5 steps
  1. 1Fry one chopped onion, tomato, chilli and cumin in the oil until soft. Add water and coriander stems and boil 15 minutes.
  2. 2Poach the fish in the broth for 10 minutes. Lift out and flake.
  3. 3Cook the cassava in the broth until tender, about 20 minutes. Return the fish.
  4. 4Toss the sliced onion with lime, salt and chopped coriander.
  5. 5Serve in bowls topped with lots of pickled onion, with popcorn on the side.
Serve it like this

Serve in a deep bowl with pickled red onion piled high, lime wedges, chilli sauce and popcorn or plantain chips alongside.
