Ingredients

4 servings
Basmati rice1¼ cups, soaked 20 minutes
Egg6, hard boiled and peeled
Onion1 large, sliced
Tomato1, chopped
Ginger garlic paste2 tsp
Whole spices1 bay leaf, 4 cloves, 2 cardamom, cinnamon
Green chilli1, slit
Mint leavesa handful
Garam masala½ tsp
Red chilli powder (indian red chili powder)¾ tsp
Turmeric (ground turmeric)¼ tsp
Cooking oil (vegetable oil)2 tbsp
Ghee2 tsp
Salt1½ tsp
Water2¼ cups

Method

4 steps
  1. 1Prick the boiled eggs, toss with a pinch of chilli, turmeric and salt and fry in 1 tsp oil till blistered. Set aside.
  2. 2Heat oil and ghee in the cooker, fry whole spices, then onion till golden. Add ginger garlic paste, chilli, tomato and spices.
  3. 3Add rice, mint, salt and water. Pressure cook for 1 whistle on medium. Let the pressure release naturally.
  4. 4Fold in the eggs and rest 5 minutes.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
