Ingredients

4 servings
Prawns (shrimp)400 g, peeled
Egg white1 egg white
Cornflour (cornstarch)3 tbsp
Cooking oil (vegetable oil)for shallow frying
Mayonnaise¼ cup Japanese mayo
Tomato ketchup (ketchup)1 tbsp
Sugar1 tsp
Lemon juice1 tsp
Sake2 tsp (optional)
Spring onion (green onion, scallion)2, sliced
Salta pinch

Method

5 steps
  1. 1Butterfly the prawns slightly, season with salt and sake and leave for 5 minutes.
  2. 2Coat in egg white, then cornflour.
  3. 3Shallow fry until crisp.
  4. 4Mix mayonnaise, ketchup, sugar and lemon.
  5. 5Toss the hot prawns in the sauce off the heat and scatter spring onion.
Serve it like this

Pile on a plate lined with shredded lettuce, sprinkle spring onion and serve with a bowl of hot rice.
