Classic dhaba chicken curry.

Ingredients

Chicken, curry cut (bone in chicken, small pieces)800 g, curry cut, bone in
Curd (plain yogurt, natural yoghurt)½ cup, whisked
Cooking oil (vegetable oil)3 tbsp
Whole spices2 bay leaves, 4 cloves, 1 inch cinnamon, 2 black cardamom
Onion3 medium, finely chopped
Ginger garlic paste2 tbsp
Tomato3 medium, chopped
Green chilli2
Red chilli powder (indian red chili powder)1½ tsp
Kashmiri chilli powder1 tsp
Coriander powder (ground coriander)1 tbsp
Turmeric (ground turmeric)½ tsp
Garam masala1 tsp
Kasuri methi (dried fenugreek leaves)1 tsp
Saltto taste
Coriander leaves (cilantro)a handful
Water1¼ cups

Method

  1. 1Marinate the chicken with curd, turmeric, half the chilli powders and salt for 30 minutes.
  2. 2Heat oil, crackle the whole spices, then fry the onions slowly until deep brown.
  3. 3Add ginger garlic paste, green chilli, the remaining powders and tomatoes. Bhuno until the oil separates.
  4. 4Add the chicken with its marinade and cook on high, stirring, for 8 minutes.
  5. 5Add hot water, cover and simmer until the chicken is cooked through with no pink at the bone. Finish with garam masala, kasuri methi and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
