Beef700 g brisket, in chunks
Gingerslices
Star anise2
Cooking oil (vegetable oil)2 tbsp
Onion2, in wedges
Garlic5 cloves
Curry powder2½ tbsp
Water4 cups
Potato3, in chunks
Thick coconut milk⅔ cup
Sugar2 tsp
Soy sauce1 tbsp
Saltto taste

Method

4 steps
  1. 1Blanch the brisket, then simmer with ginger and star anise in water for 1 1/2 hours.
  2. 2Fry the onion and garlic in oil until soft, then add the curry powder and fry until fragrant.
  3. 3Add the curry base and potatoes to the beef and simmer 25 minutes.
  4. 4Stir in coconut milk, sugar, soy and salt and simmer 5 minutes.
Serve it like this
