Ingredients

12 servings
Maida (all-purpose flour, plain flour)4 cups
Instant dry yeast1 tbsp
Milk1 cup, lukewarm
Sugar120 g dough, 100 g filling
Egg yolk4 yolks
Egg1, for glazing
Butter½ cup, melted
Salta pinch
Lemonzest of 1
Orangezest of 1
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Walnuts2½ cups, ground
Cocoa powder (unsweetened cocoa powder)2 tbsp
Egg white4 whites
Raisins⅓ cup

Method

5 steps
  1. 1Beat yolks with sugar, zests and vanilla. Add warm milk, yeast, flour and salt, then knead in the melted butter little by little until silky.
  2. 2Rise in a warm place until doubled.
  3. 3Whisk whites with sugar to soft peaks, fold in walnuts, cocoa and raisins.
  4. 4Roll dough into rectangles, spread filling, roll up, twist two rolls together and place in loaf tins. Rise 45 minutes.
  5. 5Brush with egg and bake at 170 C until deep golden; cover with foil if browning fast.
Serve it like this

Slice thick to show the dark swirl and serve on a plate with coffee or warm milk.
