Per serving, worked out from the ingredient table. Grandma's way is the starting point the other versions are compared with.

Ingredients

1 servings
Egg3, separated
Salta pinch
Butter2 tsp
Processed cheese (american cheese)1 slice, torn
Spring onion (green onion, scallion)1 tbsp, finely sliced
Tomato ketchup (ketchup)1 tbsp, to serve

Method

6 steps
  1. 1Separate the eggs: whites into a clean, dry steel bowl, yolks into a cup with the salt. Stir the yolks smooth.
  2. 2Whisk the whites with a hand mixer until stiff and glossy.
  3. 3Fold the yolks into the whites with a spatula in a few wide strokes.
  4. 4Melt the butter in a nonstick pan on the lowest flame. Spoon in the foam as one tall mound, cover and cook.
  5. 5Lay the cheese over one half, fold the omelette over it, cover again for a minute.
  6. 6Slide onto a warm plate, scatter spring onion and add a line of ketchup. Eat straight away.
Serve it like this

Serve on a warm flat plate the moment it leaves the pan, folded side up, with ketchup in a thin zigzag.
