Ingredients

6 servings
Olive oil3 tbsp
Onion1 large, diced
Celery1 stick, diced
Garlic5 cloves, sliced
Dried red chilli½ tsp flakes
Tomato puree¼ cup tomato paste
Tomato1 can chopped tomatoes
Dry white wine⅔ cup
Fish stock2 cups
Bay leaf (indian bay leaf)1
Dried oregano1 tsp
Fish300 g firm white fish, in chunks
Prawns (shrimp)250 g, shell on
Mussels500 g in shells
Clams500 g in shells
Crab1 crab, cracked (or crab claws)
Basil leavesa handful
Flat leaf parsleychopped
Saltto taste

Method

5 steps
  1. 1Soften onion, celery, garlic and chilli in oil.
  2. 2Stir in tomato paste and cook until darker, then add wine and reduce by half.
  3. 3Add tomatoes, stock, bay and oregano and simmer.
  4. 4Add crab and fish, then clams and mussels, then prawns, covering between each.
  5. 5Discard unopened shells, add basil and parsley and serve.
Serve it like this

Serve in big bowls with an empty dish for shells, napkins and thick slices of sourdough to mop the broth.
