Ingredients

4 servings
Maida (all-purpose flour, plain flour)1½ cups
Sugar2 tbsp
Baking powder2½ tsp
Salt½ tsp
Milk1⅓ cups
Egg1
Butter3 tbsp, melted, plus a little for the pan
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Dark chocolate (bittersweet chocolate)80 g, chopped, or chocolate chips

Method

5 steps
  1. 1Whisk the maida, sugar, baking powder and salt. In another bowl whisk the milk, egg, melted butter and vanilla.
  2. 2Pour the wet into the dry and fold until just combined. Rest 5 minutes.
  3. 3Heat a non stick pan on medium low and brush with butter. Pour 1/4 cup batter and sprinkle a spoon of chopped chocolate over the top.
  4. 4Cook until bubbles cover the surface, about 2 minutes. Flip carefully and cook 1 minute more.
  5. 5Serve warm, with a little extra chocolate melted over the top if you like.
Serve it like this

Stack the pancakes and scatter a few chocolate pieces on top so they melt. Add sliced banana or berries on the side.
