Ingredients

4 servings
Chicken, boneless500 g boneless thigh, 2 large pieces
Salt½ tsp
Maida (all-purpose flour, plain flour)¼ cup
Egg3: 1 for batter, 2 boiled for tartar
Cooking oil (vegetable oil)absorbed from frying
Rice vinegar3 tbsp
Soy sauce2 tbsp
Sugar2 tbsp
Mayonnaise⅓ cup
Onion¼, finely chopped and rinsed
Dill pickles (gherkins)chopped
Flat leaf parsleychopped
Cabbageshredded

Method

5 steps
  1. 1Simmer vinegar, soy and sugar until the sugar dissolves. Keep warm.
  2. 2Season the chicken, dust with flour and dip in beaten egg.
  3. 3Fry at 170 C for 6 minutes, turning, until golden and cooked through with no pink.
  4. 4Dip the hot chicken in the nanban vinegar for a minute.
  5. 5Mix the mayonnaise, chopped boiled egg, onion, pickle and parsley. Slice the chicken and spoon the tartar over.
Serve it like this

Slice the chicken, fan it on cabbage and pour a generous stripe of tartar over, with rice and miso soup.
